Italian Parmesan wheels are a valuable product—but first, they must age for up to three years in cool storage rooms. That’s too long for many small dairies, which need cash flow more quickly for production and (re)investment. So banks are now releasing the majority of the expected proceeds from the Parmesan shortly after production—as collateral for loans. However, the increased need for cooling due to hotter summers is increasingly eating into profits.
